HIKA Bilduma is the result of selecting vineyard plots and clones of Hondarrabi Zuria. The grapes come from the Izarre vineyard, which has a gradient of approximately 26%. Poor soils and low yields contribute to aromatic concentration and a pronounced mineral character.

100% Hondarrabi Zuria. A traditional white grape variety from the Basque Country and the foundation of Txakoli wines.
WINERY

HARVEST
Hand-harvested into 20 kg crates at optimal phenolic ripeness, when skins, acidity and sugars are in balance.
VINIFICATION AND AGEING
After destemming, the grapes undergo three days of cold maceration before fermentation. Malolactic fermentation takes place in French oak barrels. The wine then ages for 26 months: 10% in those barrels and 90% in stainless steel tanks.
BOTTLING
Bottled after 26 months of ageing.
TASTE AND PROFILE
Clean, bright pale yellow in the glass. The intense, persistent nose offers white fruit and subtle mineral notes. The palate is full, creamy and complex. Fruit and minerality lead into a balsamic finish with a delicate saline touch.
SOMMELIER’S RECOMMENDATION
Serve at 10–12 °C. Decant for 15–20 minutes before serving. The stated ageing potential is 8–12 years.
