The HIKA Bilduma cuvée is the result of years of vineyard observation and selection. The Hondarrabi Zuri grapes originate from the Izarre vineyard, featuring a steep 26% gradient. Poor soils and naturally low yields contribute to enhanced concentration, complexity, and mineral expression.

VARIETY
100% Hondarrabi Zuri. A traditional white grape variety from the Basque Country and the cornerstone of Txakoli wines.
HARVEST
Hand-harvested. Grapes are harvested manually into 20 kg crates. Harvesting takes place at optimal phenolic ripeness, when skins, acidity, and sugars are in perfect balance.
VINIFICATION AND AGING
After destemming, the grapes undergo cold maceration for 3 days. Alcoholic fermentation follows. Malolactic fermentation takes place. The wine is aged on its lees for 26 months: 10% in French oak barrels and 90% in stainless steel or inert vessels. The result is an exceptionally complex and structured white wine with excellent ageing potential.
BOTTLING
The wine is bottled after 26 months of ageing, once it has achieved full aromatic and flavour harmony.

TASTE AND CHARACTER
The wine is characterised by vibrant freshness, citrus-driven aromatics, delicate salinity, and a remarkable ability to express its maritime terroir. HIKA Bilduma is far from a typical light, youthful Txakoli. Thanks to its extended lees ageing and partial oak maturation, it is a serious gastronomic wine with impressive structure, combining Atlantic freshness with the depth and complexity often associated with great age-worthy white wines.
