The grapes are harvested exclusively by hand into small crates with utmost care, ensuring only the highest quality grapes reach the cellar. In the cellar, they undergo slight drying and long skin maceration to release the full aromatic and tannic potential of the variety. The wine then ages for two years in French oak tonneaux, gaining depth, smoothness and balance.
In the glass, it offers an elegant, velvety expression with notes of wild berries and cherry jam, complemented by subtle floral and spicy nuances of violet, black pepper, and cardamom. Excellent with red meats or for a quiet evening on its own.

The Simone Santoro winery grows from the roots of the Melillo family, which has cared for vineyards and olive trees in Francavilla Fontana in sunny Salento since 1833. At the heart of the story is NOSCIA, a wine whose name carries what matters most: NOSTRA, ours. Our land, our family, our history. Simone Santoro decided to return to the forgotten local variety Francavilla and give it new life. It was a journey of searching, study and humility. After years came the first bottle: fresh, mineral, with notes of mango, passion fruit and thyme. NOSCIA Francavilla Bianco became a wine that tells a story of history. Today NOSCIA also has an orange version: deeper, more structured and elegant, currently awarded Best Orange Wine of Italy 2025. Together with red wines such as Primitivo, Negroamaro and Susumaniello aged in French oak barrels, it forms a collection that combines the power of southern Italy with the finesse of traditional work.
Every grape is harvested by hand. Simone Santoro works with minimal sulfites and maximum respect for nature. He believes wine is not just a drink, but a story, and NOSCIA is the story of our home, our roots and our love of wine.
